Black ops 2 prestige question.

Just done prestige level one on Black ops 2 and i thought i could keep one weapon but i only had the option to add a custom class so does this mean i have to unlock all the weapons and upgrades again like in Black ops 1 ?

Basically, every time you prestige, your weapon, perk and equipment unlocks will reset. This does NOT include attachments, which run on their own prestige system, and camos which are permanently unlocked. It does mean you need to reach the level for a particular weapon to use it again, but it will still have whatever attachments you had when you prestiged.
You also get a prestige token, which you can use for any of three tasks. I personally just unlock all 5 Create A Class slots myself.
You also get a permanent unlock token. You can use this to unlock an item permanently, like a gun, perk or equipment, forever, going through future prestiges as well. You can use this to get whichever gun you want back again.
Also on your first prestige, you get access to new challenges under prestige. Consider them longevity goals if you wish. I do.
I recommend Scavenger/Ghost/Claymore for your first permanent unlock, assuming you don't want to unlock a weapon. They are very useful, and need high levels to unlock. Especially Scavenger.

MTAR-21 is fairly solid, but I have a preference to the the MK-48 or the MP7 in terms of starting weapons.
The MK-48 in particular can be devastating with a Suppressor, FMJ and Rapid Fire attached.

MK-48, is that the one with two small green dots each side of the sight? i see a lot of people use that setup.

As a startup weapon I'd recommend the PDW-57 (Sub Machine Gun) more than anything, and if your style is more long range then a Light Machine Gun or learning how to use Snipers early can be a big benefit.
I used the MTAR at the start and found it was increasingly underpowered at short and long range as the game went on. I've always just been more of a SMG kinda guy, though I would recommend the dreaded combination of LMG with targetfinder if you're learning how to play.
