I think I've made a few topics on this but I just think this is such a good idea. I'm posting ideas for rides/attractions. These will be realistic to the theme park industry.
Franchise: Animal Crossing
Attraction: Cappn's Riverwalk
For those who live in Texas or have visited San Antonio, you probably know what the riverwalk is. The idea is that there is a few stops on this and it will take you through scenic views of a village with animatronic characters from the game. It makes different stops at locations where you can visit your favorite places(culinary and shopping experiences) in the game like Nooks, Able Sisters, Dr. Shrunks, Katrinas ect. in addition, there will be multiple meet and greets.
Franchise: Donkey Kong
Attraction: Donkey Kong's Minecart Rush
An easy way to fit a rollercoaster into a themed ride. There could be a little cave and a tropical theme.
Franchise: F-Zero
Attraction: Falcon's Future Race
Probably the best candidate for a coaster. Taking inspiration from SeaWorld's San Diego's Manta is probably the best idea for this. Starting the ride out in a 270 degree tunnel projecting instead of Manta rays, you're at the starting line of a race and once the timer counts down to 0 the cart launches. See video.
Franchise: Kid Icarus
Attraction: Kid Icarus: The Miracle of Flight
To create a modern ride, this would probably be the perfect fit. It will use the same ride system that Harry Potter's Forbidden Journey does at Universal. I'm sure maybe a few of you have ridden the ride, but do you actually know what it looks like with the lights on?
Franchise: Kirby
Attraction: Kirby's Tilt-n-Whirl
Ride is basically a Tilt and Whirl, pretty common theme park ride but if its themed nicely it can not come off "Carnival-ish." To theme it, they could just put Kirby on the back of all the cars and make the surrounding area nice.
Franchise: Luigi's Mansion
Attraction: Luigi's Ghost Mansion
Over the past year, 2 new trackless rides released: Disney's: Mystic Manor and SeaWorld's: Antarctica: Empire of the Penguin. With that, there is much potential for Luigi's Ride to overshadow both of them. Put 3D glasses on and bring in the ghosts from Luigi's Mansion: Dark Moon flying all around you and you've literally got the perfect recipe for a great trackless ride. Unlike Mystic Manor though, they should go with the same ride system that SeaWorld went with(Trackless AND motion based). Disney and SeaWorld practically are giving Nintendo the cheat sheets to making this a great trackless ride, where as Disney did a great job and SeaWorld's tried something different but it really was just meh.

Franchise: Mario
Attraction: Mario's Super 3D Show
The idea of this show is Mario and Peach are hosting a show for all the visitors of Nintendo Land however, Bowser obviously must step in and steal the show himself.
The area preceding this attraction will look like Peach's Castle as seen in the Picture below. The show itself takes place inside the castle and looks like a high-class theater.

Attraction: MARIO KART: The Ride
Mario Kart is literally the biggest spin-off franchise ever created. So why not have a ride devoted to it. It could function like Test Track at Epcot or Cars Land at DisneyLand with having 8 carts per race fitting 4 people each it could be an awesome ride.
Franchise: Metroid
Attraction: METROID: The Ride
A lot of people think Metroid should be a lazer tag, but I whole-heartedly disagree. For an amusement park, not only would it be disruptive to have to set up everyone.. but it really fits in more with a birthday party setting rather then a theme park. So, the idea for this ride is a 3D Darkride, similar to Transformers: The Ride at Universal Parks. If they can do something simlair to the Ridley scene in Metroid: Other M that would be awesome.

Franchise: Pikmin
Attraction: Pikmin Teacups
Pikmin themed to a Teacups ride, not much more to say then that.
Franchise: Starfox
Attraction: Fox McCloud's Space Adventure
A 360 degree 3D dome show. These are becoming very popular throughout the world for example SeaWorld's TurtleTrek. This version will include spaceships flying right across your head. Not convinced? Watch this video!

Franchise: Yoshi
Attraction: Yoshi's Coaster
Just a standard coaster for the kiddies, not too short like the one's you get at a carnival. Something like Flight of the Hippogriff at Universal would work just fine. Would also be cool if in the que they made it like all cardboard-cutout themed.
Lands/themed areas:
You may have been wondering why you're favorite franchise (Pokemon/Zelda) wasn't on the list. Two of Nintendo's biggest franchises I feel, deserve their own location in the park. These are similar to the Wizarding World of Harry Potter at Universal/Islands of Adventure and AvatarLand. (opening in Animal Kingdom)
Franchise: Pokemon
Land: PokePark
Similar to the one in Japan years ago, pretty much just a bunch of Pokemon themed flat rides with games and shopping would work great.
Franchise: Legend of Zelda
Land: Hyrule
Obviously Hyrule is huge and is way to big to make an actual accurate Hyrule out of. So I think, Zelda's Castle a forest area maybe with a Belgian Horse stable(the breed of horse that Epona is) would be very cool. Maybe even the Hyrule Castle Town with many shopping and culinary experiences. In addition there would be a BIG Zelda themed ride. For me, I am not sure considering Zelda is such a huge franchise, creating an attraction would be tough. I think a dark/ride coaster mix would be awesome.
Franchise: Mario
Land: Delfino Plaza
I think this would be an awesome fit for the park. Thinking of lands from Mario Games isn't easy and to me, this one is very distinct and should have its own spot in the park, a great oppurtunity for them to put in all sorts of shops and culinary opportunities as well as 2 attractions.
Attraction 1: Shine-Down Drop Tower
Which is basically a Sunshine themed drop tower.
2nd Attraction: Probably a long shot and maybe a little bit biased from me. But an educational Dolphin show, I think this would be awesome because it really fits with the Delfino Island theme. If they were to create a pool based off of the dock area it would be pretty awesome. But again, a long shot.
