I really hate using A for forward /start etc..
Is there any way I can change the A button to perform as the B (back) button instead ?

Generally no, unless you are talking about a specific game.

On virtual console you can, but that is about it as far as I'm aware. I've always found it strange that some people don't like the (A)ccept/(B)ack system.

I don't understand this you hate the standard that's been around for 30 years? A-action B-back. Whatever man. No you can't. Game by game it depends on the game. VC can map any game. I am not sure one exists but might be an adapter to let you use other controllers with Wii U. I know there is for PS4/XBO and PC and last gen systems.

People do like it. It's just Xbox/Sony have the Aish button where the B button is on Nintendo systems.
Games that refuse to use Gameplay effectively to do anything are like films that refuse to use cinematography in film to do anything.
