If I wanted to buy a Wii game, lets say skyward sword, would I be able to play with the Wii classic controller? Or do I have to use the Wii remote for motion controls? Because I have a Wii U and I know you can't play wii games with the gamepad..are there any other accessories I would need to play any Wii game on the Wii u in general?

im sure skyward sword is wii motion plus only.
wii u premium, new super mario bros u, darksiders 2, call of duty black ops 2, zombiu
blue 3ds xl, resident evil revelations, zelda ocarina of time

Most wi accessories work, but just like the wii u or any console before it, the game needs to support the accessory for it to work in that game.

How would I know if certain games are compatible with Wii classic controller? Does it say on the game?

Every Wii game just like every Wii U game tells you on the back of the game case what controllers its compatible with.
