I would also recommend that you at least play Mass Effect 2. That is where the majority of the story comes into play, but you still will be kind of lost. Mass Effect 1's gameplay is not very good compared to 2 and 3. 2 and 3 are top notch in that category.

Also, I played Mass Effect 1 for the story but the gameplay of ME 2 and 3 is tons better. I highly recommend that you play through ME 2 before going on to 3 unless you really just don't have the time or care much to play it.
I personally don't think the Wii U extra justify buying it if you can get the games cheaper on another console. You should have no problem getting ME2 and ME3 on Xbox 360 for less than the price of just ME3 on Wii U, especially if you get them used.

Now I have it, I don't use the touch screen features much except for the shortcuts for your powers which is REALLY handy.
Personally, I think you've made the right choice getting the Trilogy, the ME series is awesome and you'll have about 70 hours+ of gameplay there going by my timeframes but I like to do side missions and stuff

the comic got old very quickly. and greatly limits your choices from the stuff in the last game.
