Yeah I agree with your thinking because a game will show you more of what it is capable of than just a video.I'm pretty sure it's not a game that will be availble, Nintendo confirmed at E3 2011 that all those tech demos are staying as tech demos, sorry.

Remember that demo was written for the gpu they were expecting the wii U to have at the time but admitted the wii U hardware wasn't finalised and we don't know how much cpu power that demo requires. Its not actually running on wii U hardware and we don't know if it will be compatible. There have been many demos released before the hardware that show greater performance than the console is capable of. Development hardware often exceeds final hardware. We don't know how much video memory the wii u gpu will have and it may not match the video card used for that demo. The development hardware likely contains a full video card using the same gpu as expected in the wii u with a lot more memory etc. Do we even know who programmed it and the specification of the development hardware used? I remember the original xbox development kit was well above the actual xbox released.

Japanese Bird Garden Demo WAS RUNNING ON THE WII U. OMFG.
Why would you make such a stupid statement? The demo is getting on a year old before the wii U hardware is finalised or even fully designed. They used other footage from ps3/360 games to demonstrate wii U.

Stop right there, that was only for the third party trailer. The bird Demo was commissioned by Nintendo made on Wii U hardware at the time to demonstrate the capabilities the system had at the time, both it, and the Zelda demo, with the Zelda Demo being made by the Nintendo EAD Zelda team including Aonuma. Why would you make such a stupid statement? The demo is getting on a year old before the wii U hardware is finalised or even fully designed. They used other footage from ps3/360 games to demonstrate wii U.
Please, actually read about what your saying instead of skimming over things and assuming your right.

It's more than likely that the Wii U specs have got greater since then, so I'm sure they'll have new hardware demos as well as showing off the games.
