No you cannot disconnect from the internet if you plan on downloading something.

If you do that, expect to have a bricked Wii U.

DO NOT DISCONNECT FROM THE INTERNET! It could brick your Wii U ( meaning it will no longer work), this is just the way the hardware works. Just let the console download the update, don't disconnect the internet or turn it off.

You can turn off your router.
If the download then gives you an error saying it can't connect, you have won.
Do not plug out the console however, as you may brick.

I notice from the above posts that there is a mis-conception.
The bricking occurs only when installing an update, not downloading.
Gaymer from this forum did it, and I have also done it, though not intentionally myself.
Once again, do not touch the console, only your modem/router.

Mine did. I think.
It was hard to tell... I hadn't downloaded much of it and it kept disconnecting itself because my internet was spotty that day.

I suggest you just let it be and finish downloading and installing the update rather then complicating matters and risk having a problem. You might regret it if you do try to stop it and continue later or try to do something in the background. The Wii U is prone to lock ups and freezing. It's better to just let it do its thing.

Just let it be and don't turn it off.

On the same subject, I should be able to just skip setting up wifi and skip the update for now, correct? Just got my Wii U for Christmas and I'm letting the Gamepad charge for a while before I even turn it on. That's patience.
