360 was 3 fast guys with itty bitty wheel barrels that could hold 2 apples each.
720 is 8 Zangeifs that can wheel mountains of apples, but take twice as long to go from tree to dump box.

So how is that better then, it can do more but it's slower doing it!? Surely do more at the same speed or faster would be better?
Hows it better? You have eight mountains of apples arrive at the same time the 360 would deliver 12 apples.

I think what's confusing me is the fact the speed is 1.6ghz where as the 360's is 3.2ghz, I can't get my head around slower speed, even if it's doing more,is an improvement? It's obviously capable looking at the games shown for the ps4 which has a similar cpu (right?)but still seems weird and confusing to me.
Its a very simple concept. It doesnt matter how fast you are at making trips if you are so weak you can only carry one apple.
If 360 makees five trips in the same amount of time 720 makes 1, but can only deliver 1 apple each trip, but 720 can deliver 500 apples in 1 trip, 360 would need to be 500x faster than its current speed of 5x faster than 720 to keep up.
Google Mhz myth for further reading, but keep in mind its not going to be as simplified as youve requested.
