Lots of great suggestions here. I'm going to blow everyone's mind though...
...I'd like to see Mario rebooted. Not any specific Mario, not a sequel, but a true reboot of Mario as a series.
I feel like a lot of the ideas in New Super Mario Bros, New Super Mario Bros 2 and Super Mario Bros U are all recycled from earlier games. I'm very interested in what you guys think of that idea.

And something else that I thought was super fun on the N64 that I'd love to play again - Beetle Adventure Racing!!!
