Ok. So I can replace Ditto with any pokemon that can breed with it for that IV guide that I have (that you may have sent to me). Wouldn't my Pokemon have to be female though?

Yes but you can just breed with a normal ditto until you get a female then start IV breeding afterwards.
You can get a normal ditto in the Pokémon village.
