While this would be a good idea you would need to hook up the WiiU (as in the console itself)somehow into your car otherwise it won't work.
It would be great if you could have some internal memory inside the Gamepad so that you could play eshop /wii(u) games on the move.

Well since the gamepad is wireless you can just plug in one of those car AC adapters into the wii u system and put it anywhere. Then just play on the gamepad.

The only setup we need is the AC adapter cause the gamepad does the screen, audio, and IR.

Well, Some if not most vans have an electric outlet, so this still could be possible.
