I'm puzzled why anyone is surprised at the lack of the PC version. Since GTA III, the PC version has been at LEAST six months after the console version and many people wished it had taken longer as the PC versions never seem very optimised (better hardware doesn't drastically improve the frame rate like it should).

Also, this game is guaranteed big sales on PS3 and Xbox 360. Even if the Wii U stays sold out throughout the whole launch window, it cannot possibly compete with the PS360 install base.

So it makes sense to hold off as it would have been hard to develop three or four different versions concurrently. Which is why the PC version comes later and this is good, as any potential Wii U version can benefit from the extra tweaks the PC version gets. Had it come out at the same time the chances of the Wii U version just being a plain port of the PS360 version would be very high.

However much I REALLY hoped to get this game on PC, as I just re-purchased GTA IV on PC and its a billion times better than on PS360, I know I will end up settling for the 360 version.

Take Two are sceptical indeed. They don't believe Nintendo will position the Wii U as a hardcore gamer's pegasus generator extension.
They do not hate Nintendo though.
They've tried to support their consoles, though never with their core franchises.
It's a little bewildering really, I can't imagine the return on Table Tennis would be anywhere near the return on a red dead redemption or gta title.
But those games would have taken processing power beyond the wii to appeal to the same market as they would on the competition's consoles.
A GTA 5 port along with the PC port would make sense for the Wii U.
They have experience with touch screen gimmicks since Chinatown Wars, similarity with the processors since the xbox 360, at least 2 times as much power as the current gen to allow for sloppiness, and it'd be a cheap test of "the waters" at considerably less cost than something new - it'd be a port after all.

It's possible, but it would be a bad idea to not have it on the console. Since it would sell, sell, sell. But it doesn't affect me, I don't really like GTA anyways. Not a fan of gritty and mean spirited games.I"d rather stomp goombas or collect rings than hijack cars and commit crimes. I do play Team Fortress 2, it just has a cartoony like style and comical quotes. It's not the violence that sets me off, it's just mean spirited stuff.
