I know there was supposed to be one for rayman available on release and there is a foreseen ZombiU demo.
I don't exactly know where to find them on the eshop.

They dont make it very easy to find a demo in the E-Shop though. As far as I can tell you have to clik on the game itself and look for an icon that looks like a signal being sent to the gamepad. They should just have a section dedicated to demos alone.
I agree. I am used to my PS3 where there is a section for demos, a section for DLC, etc. This is very confusing! Does anyone know: does it work the same way for DLC? If I wanted to see if there was any DLC for Super Mario Bros U, would I have to got to e shop, then click on the mario game and look there?

As there's been no DLC yet except for demos I don't think we will know unless in game DLC is actually released. I agree its not very user friendly or intuitive compared to the way its presented on Xbox Live and PSN. There should be separate sections for demos and in game DLC. I suspect that for in game DLC you will either have to go to the games listing on the eShop assuming its available as a downloadable game or launch the game itself and click on an option within it to take you to the eShop section for its DLC. For example the DLC for New Super Mario Bros. 2 on the 3DS you have to click on the coin rush option in the game which then takes you to the eShop section where you can download the extra coin rush levels.
