It would have to be Old model.
Namely because if they're remaking the game, as in just re-releasing it with better graphics, 3D, and maybe a few other features, I doubt they'd go out of their way to screw up continuity by using Tiny Kong's new look.

I hope they quit doing remakes... we need some new IP's please... not remakes and carbon copy sequels of everything

I agree with this. I'm not sure if this franchise is suffering or popular enough to constitute a remark regardless.
